A luxurious, carefully knit wine – contemplative and complex. The wine is super smooth, with tannins softened by time in chestnut wood. The palate is rich with notes of sweet blackberry, cherry and plum, with a salty and umami note of soy that balances the wine’s fruitiness. Decant and serve with steak for a fittingly indulgent match.
In comparison to the Chianti Colli Senesi, our Riserva is harvested from more mature sangiovese vines, with comparatively more clay than our overall predominantly sandy soil. As sangiovese is particularly sensitive to soil type, this variation between vineyards results in distinctive differences in taste. It is required by the DOCG to age the wine in wood, and we have selected chestnut instead of the now-popular oak, given that chestnut was historically more commonly used in our region. Chestnut barrels are also naturally more porous, and allow a slightly higher amount of oxygen exposure with the wine than oak barrels.
